Ingredients:
For the topping:
– 1/2 cup unsalted butter, melted ๐ง
– 1 cup brown sugar ๐
– 1 can pineapple rings, drained ๐
– Maraschino cherries ๐
For the cake:
– 2 1/2 cups all-purpose flour ๐พ
– 2 teaspoons baking powder ๐ฟ
– 1/2 teaspoon baking soda ๐ฟ
– 1/2 teaspoon salt ๐ง
– 1 cup unsalted butter, softened ๐ง
– 1 1/2 cups granulated sugar ๐
– 3 large eggs ๐ฅ
– 1 teaspoon vanilla extract ๐ฟ
– 1 cup buttermilk ๐ฅ
Directions:
1. Preheat the oven to 350ยฐF (175ยฐC). Grease a bundt cake pan generously.
2. In a small bowl, mix melted butter and brown sugar. Pour the mixture into the bottom of the bundt pan.
3. Arrange pineapple rings on top of the brown sugar mixture in the pan, and place maraschino cherries in the center of each ring.
4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
5. In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
6. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
7. Pour the batter over the pineapple rings in the bundt pan, spreading it evenly.
8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow the cake to cool in the pan for 10 minutes, then invert it onto a serving plate.
