🌟 Ingredients You’ll Need
For the Puris (Crispy Shells):
✅ 1 cup semolina (sooji)
✅ 1 tablespoon all-purpose flour (maida)
✅ A pinch of baking soda
✅ Water (as needed)
✅ Oil (for frying)

For the Pani (Spicy Water):
✅ 1 cup mint leaves 🌿
✅ ½ cup coriander leaves 🍃
✅ 1-2 green chilies 🌶️
✅ 1-inch piece ginger 🫚
✅ 1 teaspoon roasted cumin powder
✅ 1 teaspoon chaat masala
✅ ½ teaspoon black salt
✅ 1 tablespoon tamarind paste
✅ 4 cups cold water 🧊
✅ Lemon juice (optional, for extra tanginess) 🍋

For the Filling:
✅ 2 medium potatoes (boiled & mashed) 🥔
✅ ½ cup cooked chickpeas or black gram (optional)
✅ 1 teaspoon chaat masala
✅ ½ teaspoon roasted cumin powder
✅ Salt to taste
✅ Finely chopped onions (optional, for extra crunch)

👨‍🍳 Step-by-Step Instructions
1️⃣ Making the Puris (Crispy Shells)
1️⃣ In a bowl, mix semolina, all-purpose flour, and a pinch of baking soda.
2️⃣ Gradually add water and knead into a stiff dough. Cover and let it rest for 20-30 minutes.
3️⃣ Roll out the dough into a thin sheet and cut small circles using a round cutter or a small bowl.
4️⃣ Heat oil in a deep pan and fry the circles on medium heat until they puff up and turn golden brown.
5️⃣ Remove and drain on paper towels. Store in an airtight container to keep them crispy.

* Preparing the Pani (Spicy Water)
1️⃣ In a blender, add mint leaves, coriander leaves, green chilies, ginger, cumin powder, chaat masala, black salt, tamarind paste, and regular salt.
2️⃣ Blend into a smooth paste.
3️⃣ Mix the paste with cold water and stir well.
4️⃣ Adjust seasoning and add lemon juice if needed.
5️⃣ Chill in the refrigerator for at least 30 minutes for the best flavor.

* Preparing the Filling
1️⃣ In a bowl, mix boiled and mashed potatoes with chaat masala, roasted cumin powder, and salt.
2️⃣ Add cooked chickpeas or black gram if using.
3️⃣ Stir in finely chopped onions for extra crunch (optional).

* Assembling the Pani Puri
1️⃣ Make a small hole in the center of each puri using your thumb.
2️⃣ Fill each puri with the potato mixture.
3️⃣ Dip into the chilled pani or pour the spiced water inside.
