Ingredients:
For the Cherry Filling:
2 cups fresh cherries, pitted and halved ๐
2 tbsp water ๐ง
2 tbsp granulated sugar ๐ฌ
1 tbsp cornstarch ๐ฝ
For the Ice Cream:
2 cups heavy whipping cream ๐งด
1 cup whole milk ๐ฅ
ยพ cup granulated sugar ๐ฌ
4 tsp vanilla extract ๐ฆ
Pinch of coarse sea salt ๐ง
ยฝ cup chocolate chunks ๐ซ
Instructions:
1๏ธโฃ Prepare the Cherry Filling:
In a saucepan, stir together cherries, water, sugar, and cornstarch.
Heat over medium heat for 8-10 minutes, stirring occasionally, until the mixture thickens.
Remove from heat and let the filling cool on the counter for about 1 hour. Refrigerate until fully chilled.
2๏ธโฃ Make the Ice Cream Base:
In a large bowl, whisk together heavy whipping cream, whole milk, granulated sugar, vanilla extract, and a pinch of sea salt.
Continue whisking until the sugar is completely dissolved.
3๏ธโฃ Churn the Ice Cream:
Pour the ice cream mixture into your ice cream maker and churn according to the manufacturer’s directions (usually about 20-30 minutes).
As the ice cream starts to thicken, slowly add the chocolate chunks while it continues to churn.
4๏ธโฃ Layer and Freeze:
In a container, spoon โ
of the vanilla ice cream and add a layer of chilled cherry filling.
Repeat the layers two more times.
Place a piece of wax paper directly on top of the ice cream to prevent freezer burn. Cover tightly with plastic wrap or a lid.
Freeze for at least 2-3 hours before serving.
